Since ancient times, Shanxi has been celebrated for producing premium vinegar, and the best vinegar in Shanxi is found in Qingxu. As the authentic birthplace of Shanxi matured vinegar, in 2006, the brewing technique of Qingxu matured vinegar was included in the first batch of China Intangible Cultural Heritage. With a history of more than 3,000 years, the matured vinegar in Shanxi Province is one of the four famous vinegars in China, and is known as "the Best Vinegar in the World". It is made from high-quality sorghum, barley, peas and other grains through the process of steaming, fermenting, smoking, drenching and aging, and is celebrated for its five characteristics: color, aroma, mellowness, full-bondedness and acidity.

Qingxu County is one of the four famous vinegar production areas in China. As the authentic birthplace of Shanxi matured vinegar, it has three Famous Trademarks of China, including Shuita, Zilin, and Donghu, and 47 provincial famous trademarks. The annual output of vinegar reaches 700,000 tons (accounting for 20% of the national total), being the largest vinegar production base in China, with its products exported to Japan, South Korea, the United States, Australia, Chile, the European Union and other countries and regions. It has been named "Vinegar Capital of China" by the China National Light Industry Council and National Food Management Center of China Light Industry. In 2021, Shanxi matured vinegar was included in the list of Geographical Indications under the China-EU Agreement on Geographical Indications, being the only vinegar product in the list.
